Crab Bisque
My husband and I love to go to Copeland's for their crab bisque. It is SOOOOO yummy. Each time I go I think I am going to try to copy it, so I try to taste every ingredient in every bite. Anyway, the following recipe is our attempt to copy the recipe by taste only.
3 qts. Heavy Whipping Cream
16oz. chicken broth
3- 6oz cans of lump crab (you can add more if you want)
1- 13.5oz can coconut milk
4 chopped green onions (the green and white parts)
3 C. frozen baby sweet corn
1 tsp. kosher salt
1 TBS. Old Bay Seasoning
1/4 tsp. black pepper
1/4 tsp Ground Cayenne Red Pepper
Add all ingredients together. Cook on medium low heat for 2 hours. Put temperature on low heat for 2 more hours. In each bowl, sprinkle Old Bay Seasoning on top of the bisque and serve. If you like additional spice, then sprinkle a little more pepper and cayenne on top. Serve it unstirred. The crab and corn will sit at the bottom, so remember to scoop from the bottom of the pot into the bowl first and then add more of the cream.
